Crispy, crunchy shrimp toasts are the easiest seafood appetizer you can dish out at any time.

Shrimp toasts are made with sandwich bread cut into triangles or bite-size squares which are then slathered with a generous amount of seasoned minced shrimp, and coated with a layer of sesame seeds.

The prawn toasts are then deep-fried until they turn golden in colour and crispy.

What to serve with SHRIMP TOAST.

You can serve it with any type of dipping sauce available to you.

  • Sweet chilli sauce.
  • With some regular soy sauce.
  • Spicy BBQ sauce.

  • Have a plate ready with kitchen paper towels to soak in any excess oil from the fried toasts.

Method

Slightly crush the garlic cloves(2) to ease the mincing with the prawns.

Clean, and devein the prawns. Pat dry the raw peeled shrimp and add them to the food processor.
Add salt(1/4tsp), pepper(1/4 tsp), garlic(2 bruised cloves).

Run the processor until you have a shrimp paste.

Stack the white bread(5) on top of each other and cut off the crust.

Cut them across in half triangles or into 4 which will give you four squares a slice.

Add a tablespoon of the shrimp paste and then use a butter knife to spread the paste evenly over the bread cubes.

Add the sesame seeds(1/2 a cup) onto a flat plate.

Place the slices of bread with the shrimp paste facing down and gently press.

Make sure each slice of shrimp bread is coated evenly with sesame seeds. Set the raw sesame prawn toasts on a plate.

Fill a deep pan with oil and bring to a low-medium heat(let the oil heat for 1-2 minutes).

  • 2 teaspoons of red chilli powder(increase or reduce as per your need)
  • 1/2 a teaspoon of turmeric powder
  • 3 medium-sized tomatoes chopped
  • 1 cup of water
  • 1 teaspoon of tamarind paste(or 4 tablespoons of tamarind juice from soaked tamarind pulp in 1/4 cup of warm water, discard seeds)
  • 1 teaspoon of sugar(if the shrimp curry is sour to your taste)
  • Coriander to garnish

  • 500g of cleaned, deveined shrimp
  • Salt to season
  • 1/2 teaspoon of red chillie powder
  • 1 and 1/2 a cup flour
  • 1 and 1/2 teaspoon baking powder
  • 1/3 cup cornstarch
  • 1 lightly beaten egg
  • 1 and 1/ cup water(use as needed, only adding in 1/2 a cup to reach the correct consistency).
  • 1 to 1 and 1/2 a cup oil to fry

Instructions

  1. If using fresh shrimp, remove the head and shell of the shrimp.
  2. Leaving the tail on. Devein, rinse with water and set aside in a colander to drain excess water.
  3. If using frozen shrimp, let the shrimp thaw, rinse and drain excess water.
  4. Pat dry the shrimp with kitchen paper towels and transfer them to a plate or wide bowl.
  5. Season with Salt(1/2 tsp) and mix the salt into the shrimp.
  6. How to make the easy batter to coat the shrimp.
  7. Use a large wide bowl to mix in the batter.
  8. Sift flour(1 and 1/2 a cup), corn flour(1/3 cup corn flour), baking powder(1 and 1/2 tsp), salt to season, red chillie powder(1/2 tsp) into the bowl.
  9. Add a whole or lightly beaten egg(1).
  10. pour in water gradually(in 1/2 a cup)until the batter reaches the correct consistency for the shrimp to be coated in.

  17. Fry the shrimp in batches of three until golden brown.
    This would probably take you roughly 3-4 minutes.
    Turn the shrimp over for an even fry. Make sure to fry them until they are a deep golden colour before you drain them from the oil.
  18. Once the battered shrimp turn golden, use a slotted spoon to lift the shrimp and drain any excess oil.
  19. Transfer the battered and fried shrimp onto the kitchen paper towels.
  20. Avoid stacking fried shrimp over each other once they are fried, spread them as a single layer.

  21. To serve add them onto a plate while with some cocktail sauce and serve immediately.

RECIPE OVERVIEW FOR teriyaki shrimp

Ingredients to cook teriyaki shrimp.

To make the teriyaki shrimp stir fry, you would need 12 ingredients.
If you are a regular cook these ingredients are already in your kitchen pantry.
There are only 3 ingredients that you may have to purchase, they are corn starch, mild white vinegar and of course your choice of shrimp.

  • Cleaned fresh or frozen shrimp

How to make shrimp teriyaki stir fry.

Begin with preparing the shrimp.
Clean, rinse and devein the shrimp.

Sautee the shrimp in oil. cook only until they turn pink, making sure not to overcook them.
Cook both sides.
Once the shrimp are done, transfer them to a separate bowl.

The next step in making the teriyaki shrimp recipe is to make the teriyaki sauce.

How to make the teriyaki sauce.

Add the minced ginger garlic to the pan.
Add soy sauce, sugar, and rice vinegar to the pan.
If you prefer heat to your teriyaki sauce then add red chilli flakes to the sauce.
Mix the cornstarch with the water and add to the pan.
Over low heat, cook the teriyaki sauce while continuously stirring.

This easy seafood side dish is easy to make and uses minimum ingredients but packs loads of flavor.

It’s a healthy shrimp stir-fry with a homemade teriyaki sauce that you’ll enjoy.

Ingredients

  • 500g of cleaned shrimp
  • 1/8 teaspoon salt

To make the teriyaki sauce

  • 1 tablespoon of cornstarch
  • 1/3 cups of water
  • 1/2 a cup soy sauce
  • 1/2 a cup of water
  • 3-4 tablespoons of sugar
  • 2 tablespoons of rice vinegar(substitute with white vinegar)
  • 1 teaspoon of minced garlic
  • 1 teaspoon of minced ginger
  • 1 tablespoon of red chilli flakes
  • 2 tablespoon of oil

Instructions

  1. If using fresh shrimp, remove the head and shell off the shrimp, leaving the tail on. devein, rinse with water and set aside in a colander to drain excess water.
  2. If using frozen shrimp, let the shrimp thaw, rinse and drain excess water.
  3. Place the shrimp in a bowl and season the shrimp with salt(1/8tsp) and combine.
  4. Set aside for two minutes.
  5. How to make the teriyaki sauce.
  6. Add cornstarch(1 tbs)to a bowl of water(1/3 cup). stir until you have a smooth liquid. This cornstarch will help to thicken the sauce. set aside.
  7. Place a saucepan over low medium heat and add soy sauce(1/2 cup), water(1/2 water), sugar(3-4 tbs), rice vinegar(2 tbs. substitute with white vinegar), minced garlic(1 tsp), minced ginger(1 tsp), red chilli flakes(1 tbs).
  8. Add the cornstarch to the sauce, stir and let the sauce thicken(3-5 minutes).
  9. Once the sauce has reduced to half and thickened, bring the sauce to a boil and then remove it from the stove and set it aside to cool.

How to cook the shrimp for the teriyaki dish.

  1. Place a frying pan/skillet over medium heat and add oil(2 tbs).
  2. Make sure the shrimp are dry and add them to the pan. avoid the shrimp piling on each other and leave space between each individual shrimp.

    Cook each side for 2-3 minutes or until they turn pink, making sure not to overcook them.
  3. Once the shrimps are cooked, reduce the heat to low and pour in the teriyaki sauce over them.
  4. Combine with the sauce and remove from the stove. taste and season as per your need.
  5. Transfer to a serving dish, sprinkle sesame seeds and serve while warm.

Shrimp fried rice

Homemade shrimp fried rice that is better than your favorite take out restaurant fried rice dish.

This version of shrimp fried rice is made with shrimp, leftover chilled rice, scrambled eggs, corn,carrots, and scallions.

All you need is a wok to put together this tasty shrimp fried rice in 30 minutes.

Flavors in the shrimp fried rice.

The shrimp for this fried rice is cooked just long enough to maintain its tender and sweet flavour.

The fluffy scrambled eggs add another level of texture to the fried rice.

You can add any type of veggies that stir fry quickly. I’m using canned corn, carrots that are shredded fine, and scallions.

While the above ingredients add the main flavors and texture.

To make the best seafood fried rice, a balance of sesame oil, garlic and ginger should be present. This gives its aroma and familiar tastes of your favorite shrimp fried rice.

Tips to make the easy shrimp rice.

Always use leftover rice that has been refrigerated for a few hours.

Have all the ingredients ready so that you can wip up this dish in less than 30 minutes

Having chilled leftover rice to add to the hot stir-fried vegetables won’t overcook the rice and turn it mushy.

Add the ingredients for the shrimp rice in the given order mentioned in the recipe.

Use a large wok or frying pan to make this seafood one-pot dish.

How to make shrimp fried rice from scratch.

The rice for the recipe.

The first step of making this recipe is to have some chilled leftover rice.

If you don’t have any, cook a batch of rice, let it reach room temperature, then spread on a flat tray and refrigerate for at least 2-3 hours.

Preparing the shrimp.

You can use both frozen and fresh shrimp for the fried rice.

If using frozen shrimp, defrost the shrimp and pat dry any excess moisture before use.

Fresh shrimp can be washed but remove any excess water before cooking them.

Place the shrimp in a bowl and season with salt and red chillie powder. Marinate for 10 minutes.


Vegetables for the shrimp fried rice.


Chop the vegetables you are using for the shrimp fried rice.
You can use green peas, beans cut into smaller pieces, and mushrooms as well.


Slightly whisk the egg and set aside until used.


Assembling all the ingredients for the fried rice.

Place a non-stick frying pan(ceramic or anodized pan) over medium heat and let the pan heat for 10-15 seconds.

Reduce heat to low-medium and pour in the oil.

Add shrimp to the pan, leaving space between the individual shrimp.

Cook each side of the shrimp(prawns), turning them over after under a minute.
Cook until both sides of the shrimp are cooked.
Just untilCook them until they just turn pink to avoid a rubbery texture.

Transfer the shrimp to a bowl.

Place the wok or frying pan over low medium fire.

Pour in some oil and saute the and garlic for a few seconds over medium heat.

Add the corn, carrots and scallions into the pan. Cook these ingredients while mixing for 3-5 minutes.

Pour in 1/4 cup of water and let the vegetables cook until soft.

Once the vegetables are cooked, make sure that there is no liquid before following the next step.

Move the vegetables to a side and make space to scramble the egg.

Pour in some oil and pepper and scramble the eggs for a few seconds.

Cook the eggs just long enough that they are still fluffy and semi-soft.

Add the rice with the soy sauce and combine with the scrambled eggs and veggies.

Taste and make any necessary adjustments. This would include adjusting salt and soy sauce to balance flavors.

Add the cooked shrimp into the fried rice and gently combine.

Serve warm

An easy one-pot meal using shrimp and leftover rice for the whole family

Ingredients

  • 700g of shrimp deveined and shelled
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of red chilies powder
  • 3 eggs lightly whisked
  • 5 tablespoons of oil to be used as needed on the recipe instructions
  • 1 tablespoon of minced garlic
  • 1 cup of corn(you can use canned or frozen)
  • 1 cup of diced carrots(2 medium carrots diced)
  • 3 scallions or green onions chopped
  • 2 teaspoon of crushed pepper
  • 3 tablespoons of soy sauce
  • salt to season

Instructions

Have 2 cups of leftover chilled rice ready.
If you don't have any leftover rice, cook some rice in your rice cooker.

Once the rice reaches room temperature, spread the rice over a flat dish and refrigerate for 2-3 hours until the rice is chilled.

Season your cleaned, deveined prawns in a bowl. season with salt and red chilies powder. marinate for 5-10 minutes.

Place a wok or frying pan over low medium heat.

Pour in the oil, let the oil heat for a few seconds and add the shrimp and spread them over the pan to cook.

Cook each side for under a minute to avoid overcooking the shrimp. just long enough that they turn pink.
Remove the shrimp to a dish.

pour oil to the same wok with the remaining oil and marinade juices.

Add the minced garlic to the wok and cook for 15 seconds. add the corn, carrots, and scallions to the wok.

Cook for 3 minutes over medium heat. pour in the water to further soften the veggies. stir the ingredients in the wok often until there is no water left.

Move the vegetables to aside. add the whisked eggs and pepper and scramble lightly.

Add the chilled rice, soy sauce and salt to season. combine rice with the vegetables and scrambled eggs in the pan.
Add additional oil(1 tablespoon), soy sauce, salt to season.

Cook for 2 minutes.

Add the cooked shrimp to the fried rice and gently combine all ingredients to make the shrimp fried rice.

Serve warm.

SHRIMP COCONUT CURRY SRI LANKAN STYLE

A wonderful Sri Lankan-style curry made with shrimp and coconut.

This shrimp curry dish combines thick coconut milk, a few aromatic spices,
tempered ingredients which have been cooked into a curry paste to create 

a superb seafood curry that combines well with just about everything.

We are cooking this delectable shrimp curry in such a way that the flavours of the curry powders are subtle yet will complement the seafood curry.

By varying the amount of red chilli powder and black pepper you use, you can

change how spicy the curry turns out.

By mThe gravy for the prawn curry is made first and then the prawns are added.

It keeps the shrimp from overcooking and turning rubbery in texture.

The creamy flavour of these prawns is due to the coconut milk used to prepare the gravy sauce in which they are cooked in.

You can adjust the gravy to make it thick and sauce-like by adding thick coconut milk or a typical Sri Lankan curry gravy by adding slightly thinner coconut milk.

The first step of cooking the curry shrimp is to temper the ingredients and make a wet curry paste.

The tempering ingredients-
Curry leaves, lemongrass and ginger-garlic paste and onions are first tempered in oil.

They contain red chilli powder, turmeric and Sri Lankan raw(unroasted)curry powder.

Thick spice paste to make the prawn coconut curry.

Then thick coconut milk is added to make the thick coconut milk gravy.
Slow-simmer the thick coconut gravy.

Taste and season with salt. Add a teaspoon of sugar(optional) to give a mildly sweet flavour.

This shrimp curry carries very mild flavors of the curry powders and spices used in most Sri Lankan cooking.

Ingredients

  • 2 tablespoons of oil
  • 1 Large onions sliced fine
  • 1 tablespoon of minced garlic(3 cloves)
  • 1 tablespoon of minced ginger(1-inch piece)
  • 2 green chillies split into two
  • 1 lemongrass slightly bruised
  • 2-inch piece Cinnamon
  • A sprig of curry leaves
  • 1 teaspoon turmeric powder
  • 2 tablespoons of curry powder
  • 1 tablespoon red chillie powder
  • 1 and 1/2 a cup thick coconut milk
  • 1 kg prawns cleaned and deveined

Instructions

  1. clean and devein the prawns, drain any excess water completely and place them in a bowl. season with salt and lime,
  2. cover and set aside until needed.
  3. Place a pan over low-medium fire and pour in the oil(2 tbs).
  4. Once the oil heats add the onions(1 large sliced), curry leaves(5-6), garlic(1 tbs)and ginger(1 tbs), lemongrass(1 bruised), cinnamon(1-inch), green chillies(2 split).
  5. Cook the above tempering ingredients for 3-5minutes over a low medium fire or until the onions turn soft.
  6. Add turmeric(1 tps), curry powder(2 tbs), red chilli powder(1 tbs)over low fire combine for 3 minutes to make a wet paste.
  7. Pour in the coconut milk(1 and 1/2 a cup), stir season with salt, and slow simmer for 30 minutes or until you have a thick gravy.
  8. Once the coconut milk gravy is thick(should reduce to 1/2 half of the liquid amount), add the prawns.
  9. Reduce fire and slow simmer for 20 minutes.
  10. Taste and adjust heat and seasoning as per your need. for a sweeter taste add sugar(1 tbs, optional)and serve with warm rice.
