Coconut shrimp curry is a quick shrimp recipe you can make with ease using minimum ingredients.
The shrimp are cooked in a coconut milk sauce infused with ginger, garlic, lemon juice, and zest to complement the sauteed tender shrimp.
The creamy and tangy flavours in the shrimp curry are exactly the kind of one-pot dinner to wind down your day.

To make coconut curry shrimp, you’ll be using a ginger-garlic paste to marinate as well as cook the coconut curry sauce.
This allows you to taste and smell the pungent aromas and warm flavour profiles in the dish.
When you add a little bit of citrus flavour and aroma from the lemon zest, you end up with a clean, creamy yet light seafood dish.
The key to cooking the best shrimp curry is balancing the creaminess, and tang with a little heat from both cumin and red chilli powder.

To make this creamy shrimp curry, you will need two sets of ingredients.
The first set of ingredients is to marinate the shrimp and the second is to make the coconut milk sauce in which the shrimp can be cooked.

    • Shrimp cleaned and deveined(30 medium-sized shrimp).
    • Ginger garlic paste(you can add 1 teaspoon of garlic and 1 teaspoon of ginger paste separately as well).
    • Turmeric powder
    • Oil
    • Salt to season
  • Ingredients to make the creamy coconut milk sauce.
    • Onion chopped
    • Ginger garlic paste
    • Red chilli powder
    • Cumin powder(optional)
    • Turmeric powder
    • lime or lemon juice
    • Lime or lemon zest
    • Salt to season(use cautiously)

How to cook shrimp in coconut milk curry.

Add the shrimp to a bowl, and make sure the shrimp is dry.
Add ginger-garlic paste, turmeric powder, oil, and salt to season the shrimp.
Combine the shrimp with the ingredients and let it marinate for 30-45 minutes.
If you are living in a humid country, refrigerate for the period the shrimp needs to be marinated.
Place a flat pan over low medium fire, add the shrimp to the pan, toss and cook for 1 minute on each side.
Transfer the shrimp to a bowl.
If there is any liquid left in the pan transfer it to a separate bowl to be used later.
To cook the coconut curry sauce, place the same pan over a low-medium fire.
Pour in the oil, add the ginger-garlic paste, turmeric, chopped onions, and cumin(optional).
Cook until onions turn soft, stir frequently and cook for 2-3 minutes.
Pour in the coconut milk and the leftover juice from the cooked shrimp.
Simmer over low heat while stirring gently.
Cook for 5-7 minutes until thick.
To add a tang to the coconut milk, add a tablespoon of lemon juice(or lime juice)and lemon zest.
Taste and season with salt. if you need to increase the tang of the coconut milk then use more lemon juice.
Continue to cook for another 3-5 minutes.
When you are satisfied with the thickness and creaminess of the coconut milk gravy.
Reduce heat to low and add the shrimp.
Cook for exactly 2 minutes and remove from the stove.
Stir and let the tangy coconut milk shrimp cool down for a few minutes.
Transfer to a bowl, and add a few teaspoons of fresh coconut milk.
Garnish with some chopped parsley and serve.

Hot and spicy shrimp, if you love a lot of heat in your seafood then you need to give this spicy shrimp recipe a try.

Full of amazing flavour, you can’t go wrong with a platter of spicy shrimp proving that chilli and lime are the perfect combinations.

30 minutes and a handful of ingredients are all you need.

This spicy shrimp recipe is based on two main flavour profiles.

They are the tang and acidity from the lime and the heat and spiciness from the red chilli powder.

These two ingredients and seasoning are first mixed in oil to create an easy chilli lime marinade that the shrimps are soaked in.

I’ve added a little habanero hot sauce to the marinade to increase the heat and you can do this as well.

You can also experiment with your favourite hot sauces as well as add a little sweetness to the chilli lime shrimp.

Shrimp cleaned and deveined(about 30 medium-sized shrimp)

Lime or lemon juice

Lime or lemon zest

Oil(vegetable oil, sunflower oil, coconut oil)

Cloves of garlic minced

Red chilli powder

Red chilli flakes

Cumin powder

Hot sauce(I’ve used a habanero sauce)

Honey or sugar(optional if you find the marinade to be too tart and want to balance it off with a little sweetness)

How to cook spicy shrimp recipe.

To make this hot shrimp, the first step is to make the spicy marinade in which the shrimp is soaked in.

To a bowl, add oil, minced garlic, red chilli powder, red chilli flakes, cumin powder, your favorite hot sauce, salt to season.

You can add a bit of sugar or honey to balance the tartness and heat.

Mix well until combined.

Place the cleaned and deveined prawns in a bowl, and pat dry.

Pour in the chilli-lime marinade and combine with the shrimp.

Let them marinate for at least 30-45 minutes.

Refrigerate if you live in a hot and humid country.

How to cook the shrimp in the spicy marinade.

Once the shrimp are marinated, if you stored the shellfish in the fridge, let it reach room temperature.

Drain all the excess marinade into a smaller bowl and set it aside as it will be used later.

Place a pan over a low-medium fire. add shrimp and spread them over the pan. cook each side for 1 minute or until they turn pink.

Transfer to a bowl and set aside.

If you look at the pan you cooked the shrimp in, you will find a certain amount of liquid that the shrimp released.

To this liquid, add the remaining chilli-lime marinade you saved.

Cook the spicy chilli lime marinade over low-medium heat, until it reaches a syrup-like consistency.

This will happen when tiny bubbles start appearing on the surface.

Once you have the correct consistency, add the shrimp and toss them around to coat. not more than 2 minutes to avoid the rubbery texture.

Transfer the spicy shrimp to a bowl or platter.

If there is any remaining leftover marinade in the pan, add a teaspoon of hot sauce, mix and pour over the shrimp.

  4. Pour in the chili-lime marinade and combine. cover and set aside to marinate for at least 30-45 minutes.
  5. Refrigerate if you live in a hot and humid country.

The Bengali prawn curry is known for its rich creamy coconut gravy and the subtle but distinct flavours of aromatic spices in this Indian prawn dish.
This malai prawn curry is ideal for serving a prawn curry that is not too spicy for family and friends.
The creaminess of this seafood dish will make you come back for extra servings.

To make the Malai prawn curry you will first make the prawn gravy.
The shrimp curry is made in stages. each of these steps is concentrated on adding flavours most economically and effectively.
First, we make a paste of onion, ginger, garlic, and green chilli.
Then the spices, bay leaf, green cardamom, and cloves are sauteed.
When these ingredients are ready, the onion paste is cooked with turmeric, coriander powder, cumin powder, and red chilli powder with a dash of sugar.
Once you have this Malai curry paste ready, coconut milk is added with some water.
When the gravy is ready, the prawns are added and simmered for a few minutes.

To make the malai prawn curry recipe, there are three sets of ingredients.
The first set is to season the shrimp.

  • The second set of ingredients is an onion curry paste.
  • The third set of ingredients is used to make the coconut curry gravy that the shrimp is cooked in.
  • To marinate the shrimp
    • Shrimp cleaned and deveined(I am using prawns that have their shell and head removed. You can cook with the shell and head intact as well).
    • Turmeric powder
    • Salt to season
  • To make the onion paste
    • onion chopped
    • ginger piece
    • cloves of garlic
    • green chilli which you can substitute with any type of chillie or bell pepper.
    • Water
  • To make the malai prawn curry gravy.
    • Bay leaf
    • Green cardamoms
    • Cloves
    • Turmeric powder or paste
    • Red chilli powder
    • Sugar
    • Salt
    • Cumin powder
    • Coriander powder
    • Coconut milk
    • Water

How to cook malai prawn curry.

As usual, we clean, devein and pat dry the shrimp(prawns) with a kitchen paper towel.
As mentioned earlier you can cook the shrimp curry with the shell on as well.
Place them in a bowl. add turmeric and salt and combine well.

Set aside for 10 minutes.

While the prawns marinate,

Add the onions, ginger, garlic, and green chilli into a spice blender.
Add water to make the grinding process easier.
Blend until you have a fine paste and set it aside.

Place a large frying pan over low medium heat.
Pour in oil, reduce heat to low, and add the prawns.
Spread them so they don’t crowd each other and saute the shrimp for just under 1 minute on each side.
Avoid overcooking the prawns as they are simmered in coconut milk as well so they need to be almost underdone at this point.
Once done, transfer to a bowl.

Do a quick rinse or wipe the frying pan you used and gently dry roast the bay leaf, cardamom, and cloves for 2-3 minutes.
Once the spices are dry roasted, add the onion paste to the pan.

Cook over low medium heat for 3-4 minutes while combining with the spices.

Add the spice powders, turmeric, red chilli powder, sugar, salt, cumin powder and coriander powder.

Add thick coconut milk with half a cup of water.

Ingredients

  • To marinate the shrimp
  • 500g of shrimp cleaned and deveined(I am using prawns that have their shell and head removed. you can cook with the shell and head intact as well).
  • 1/2 a teaspoon of turmeric powder
  • Salt to season
  • To make the onion paste
  • 1 large onion chopped
  • 2″ ginger piece
  • 3 cloves of garlic
  • 1 large green chilli(use any type of chilli available to you, even bell pepper)
  • 2 tablespoons of water
  • To make the malai prawn curry gravy
  • 1 bay leaf
  • 3 green cardamoms
  • 3 cloves
  • 1/2 a teaspoon of turmeric powder or paste
  • 1/2 teaspoon of red chilli powder
  • 1 teaspoon of sugar
  • 1/4 teaspoon salt
  • 1 teaspoon of cumin powder
  • 2 teaspoon of coriander powder
  • 1 cup of coconut milk
  • 1/2 a cup of water

Instructions

  1. Clean, devein and pat dry the shrimp(prawns) with a kitchen paper towel.
  2. Place them in a bowl. add turmeric(1/2 tsp), salt and combine well. set aside for 10 minutes.
  3. While the prawns marinate.
  4. Add the onions(1 large, chopped), ginger(2″ piece), garlic( 4 cloves), green chilli(1)into a spice blender.
  5. Add water(3 tbsp)to make the grinding process easier.
  6. Blend until you have a fine paste and set it aside.
  7. Place a large frying pan over low medium heat.
  8. Pour in oil(1 tbs), reduce heat to low, and add the prawns.
  9. Spread them so they don’t crowd each other and saute the shrimp for just under 1 minute on each side.
  10. Avoid overcooking the prawns as they are simmered in coconut milk as well so they need to be almost underdone at this point.
  11. Once done, transfer to a bowl.
  12. Do a quick rinse or wipe the frying pan you used and gently dry roast the bay leaf(1), cardamom(3), cloves(3)for 2-3 minutes.
  13. Once the spices are dry roasted, add the onion paste into the pan.
  14. Cook over low medium heat for 3-4 minutes while combining with the spices.
  15. Add turmeric(1/2 a tsp), red chilli powder(1/2 tsp), sugar(1 tsp), salt(1/4 tsp), cumin powder(1 tsp)and coriander powder(2 tsp).
  16. Add thick coconut milk(1 cup)with 1/2 a cup of water.

Place a small pan over low fire, add the sesame seeds(1 tbsp), gently toast between 1-2 minutes until they slightly darken in color.

For best results, I would advise you to use Kashmiri chilli powder which has a beautiful dark crimson colour and mild heat.
Once you have all the above ingredients, add the yoghurt and make the tandoori paste.
The cleaned and deveined shrimp are then marinated in the tandoori paste for as long as possible, to soak in the flavours.

Mix and combine well, taste, and adjust the lime and salt flavours as you need.
You can also add more heat by adding red chilli powder.
We combine all these spices with the yoghurt until you have a thick paste. this is your quick tandoori masala in which the shrimp is going to be marinated.

Add the shrimp to this tandoori masala and combine.
Cover with a cling film and refrigerate for at least 1-3 hours.

Cooking the Tandoori prawns.

There are different ways to cook tandoori prawns.
We are using the stovetop method to make these grilled prawns.

  • Using a stovetop grilling pan.

Place the grilling pan over medium heat and let the pan heat. Brush oil and place the skewered shrimp.
Grill each side for 2-3 minutes while brushing oil until they turn golden in colour.
To add a smoky flavour, let them char a little bit over high heat.

  • Using a tawa or frying pan.

For this method, you won’t be able to use skewers.
Place pan over the low-medium fire and pour 2 tablespoons of oil.

  • Cooking tandoori shrimp over a stovetop frying pan or grilling pan.

Remove the shrimp from the refrigerator and let them reach room temperature(15-20 minutes).
If you are making them as tandoori shrimp kebabs, then soak a few bamboo skewers in water for 15 minutes and thread the marinated shrimp onto these skewers. 5-6 on each stick.
Make sure to remove excess tandoori marinade.
You can also simply cook them as it is.
Add the marinated shrimp and spread them over the pan. You will notice the excess marinade cook and then leave the dry shrimp to cook.

    • Brush oil or ghee and use the grill function or bake function to cook the shrimp for 12-15 minutes until they are golden in colour.

How to cook the Indian prawn curry.

This is a prawn(shrimp) curry that comes together in 3 main steps.

Onion, ginger, garlic, and tomato, make the base for the next step of adding raw spices like turmeric powder, coriander powder, chilli powder, and garam masala.
Adding these familiar Indian curry powders helps form a good spice paste known as a spiced masala.

The 3rd step of making the Indian prawn curry is tempering some onions, garlic, and cumin and then adding coconut milk, bringing it to a sauce with a thick consistency.

INDIAN PRAWN CURRY(masala curry).

Indian prawn curry, a prawn recipe made with an aromatic masala(spice paste)that is cooked into a rich and thick sauce of creamy coconut gravy to give you a mildly spiced shrimp curry to enjoy.

Ingredients

  • For the prawn masala
  • 2 tablespoons of oil
  • 1 large onion sliced thin or chopped
  • 1 tablespoon of ginger garlic paste
  • 1 large tomato chopped
  • 1/2 a teaspoon of turmeric powder
  • 1 teaspoon of red chili powder
  • 1 teaspoon of coriander powder
  • 1/2 a teaspoon of garam masala powder
  • 1/3 cup of thick coconut milk(substitute with 1/3 cup cashews blended to a powder)
  • To make the prawn masala curry
  • 2 tablespoons of oil
  • 1 sprig of curry leaves
  • 1/2 a teaspoon of cumin seeds
  • 3 garlic cloves chopped
  • water(1 cup)
  • 500g of prawns cleaned and deveined

Instructions

  1. Here is a complete guide on how to clean and devein prawns. prepare the shrimp as instructed and set aside to drain any excess water.
  2. Place a medium-sized pan over low-medium fire and pour in the oil(2 tbsp).
  3. Once the oil warms, add the onions(1 large onion, sliced or chopped) and the ginger garlic paste(1 tbsp).
  4. Cook for a minute until they turn translucent and light golden in color.
  5. Add the chopped tomato(1 large) and turmeric powder(1/2 tsp).
  6. Cook and break down the tomatoes as you combine the ingredients.
  7. Add coriander powder(1 tsp), red chilli powder(1 tsp) and garam masala(1/2 tsp).
  8. Reduce heat to low and combine the spices.
  9. Once you have a semi-spice paste, pour in the coconut milk(1/3 cup, substitute with 1/3 cup of cashews powdered).
  10. Cook for a few seconds and you will have a thick prawn masala sauce(gravy). Set aside to cool.

How to cook the Indian prawn curry.

  1. Place the pan you will be cooking and assembling the prawn curry over the stovetop.
  2. Pour in the oil(2 tbsp) into the pan.
  3. Add the curry leaves(a sprig), cumin seeds(1/2 tsp), garlic(3 cloves sliced), and saute over low heat.
  4. Make sure not to burn the cumin seeds by constantly stirring and maintaining low heat.
  5. Saute for 30 seconds.
  6. Immediately transfer the prawn masala paste you made earlier on to the pan.
  7. Add water(1 cup), stir with the prawn masala. Taste and season with salt.
  8. Cook over medium heat until the prawn gravy thickens(about 15-20 minutes) or until you have a thick gravy.
  9. The prawn gravy should reach the consistency of a sauce.
  10. Once the prawn masala gravy is thick, add the cleaned prawns(shrimp) into the gravy.
  11. Maintain low-medium heat. Cook the prawns in the sauce for just under 10 minutes so they don’t turn rubbery.
  12. Serve the warm Indian prawn masala curry.
