Add flour to a medium-sized frying pan, and season with salt, and red chilli powder(substitute with old bay seasoning, and sweet paprika).
Shake and combine the flour with the seasoning.
In a medium-sized bowl, beat the eggs lightly and place them close to the seasoned flour container.
Add breadcrumbs to a separate medium-sized bowl, and set it close to the beaten egg bowl.
Have an extra plate set to hold the floured and breaded shrimp.

Make sure the shrimp are dry. Add them to the seasoned flour and coat them well on both sides.

Add oil to a deep frying pan, and bring the oil to a steady temperature.
Drop a few bread crumbs into the oil and wait for them to sizzle.
The bread crumbs sizzling is a sign that the oil has reached the proper temperature.
Begin with adding one breaded shrimp and fry it until it turns golden brown which will take about 1 minute and 30 seconds for both sides.
Once you have the correct temperature and how long to fry the shrimp.
Deep fry all the shrimp in batches of 3 or 4.
Transfer onto kitchen towels to remove any excess oil.

  5. Have a small sharp knife, toothpicks (2 or 3), and some kitchen towels ready.

Simply hold the shrimp with your hand and the body of the shrimp with your other hand.
Then, pull apart; this should easily separate the head from the body.

  • So what exactly is the black vein in shrimp?
    • The black vein is the digestive tract of the shrimp. This is where all the waste(shrimp poo as some call it) is stored.
  • Do you have to devein the shrimp?
    • The black vein in the shrimp is not known to be poisonous, but it is totally up to you.
    • Most prefer to devein the shrimp to avoid any unpleasant comments while serving them.

Two ways to devein shrimp.

  1. The toothpick method.
    • If you are using the toothpick or cocktail method, there are two ways to hold the shrimp.

Once you decide on how to hold the shrimp, insert a toothpick or a cocktail stick between the shrimp shells.

Gently pull out the black vein and check if there are any more vein bits left.

Making the sweet and spicy shrimp.

Place a medium-sized frying pan over a low-medium fire and pour in the oil.
Add the minced garlic(2-3 cloves) and cook until just golden(2 minutes).
Once the garlic turns golden, add the fresh shrimp and cook over a low-medium fire just until they turn pink.
Pour in the sweet and spicy sauce, reduce heat to low and cook until the sauce thickens(not too thick but still has a flowing consistency).
Taste and season with salt if needed. if the sauce should thicken too much, add a few tablespoons of water.
Garnish with sesame seeds and serve while still warm.

Sweet and spicy shrimp(prawns)

Sweet and spicy shrimp is a delectable shrimp stir-fry that can be served in less than 20 minutes.

Ingredients

  • 500g of deveined and peeled shrimp
  • 1/4 teaspoon salt
  • 3 tablespoons of oil
  • 1 tablespoon of minced garlic(2-3 cloves)
  • To make the sweet and spicy sauce
  • 1/4 cup tomato sauce(ketchup)
  • 2 tablespoons of red chilli flakes(reduce or increase as per your need)
  • 1 tablespoon of sugar(can be increased by another tablespoon if you need the sweet and spicy sauce to be sweeter)
  • 2 tablespoons of soy sauce
  • 1 teaspoon of cornstarch
  • 1/2 a cup of water
  • 1 tablespoon of sesame seeds

Instructions

If you are using fresh shrimp, clean, devein, and wash the shrimp.

Drain any excess water and pat dry with some paper towels.

Place the shrimp in a bowl, season with salt(1/4 tsp), and mix well. Set aside.

Into a small bowl combine the tomato sauce(1/4 cup), red chili flakes(2 tbsp), sugar(1 tbsp), soy sauce(2 tbsp). Mix until sugar is dissolved.
